A tahona is a giant volcanic stone wheel — hand-carved, sometimes pulled by a horse, sometimes by tractor. It rolls slowly over cooked agave and crushes it over hours, not minutes.

Most tequila brands don't do this. They use a roller mill — a machine that shreds the agave in minutes. Faster, cheaper, higher yield. But the fibers get destroyed, the sugars get bruised, and you lose a huge chunk of the natural flavor.

The tahona is gentle. It extracts sugars without tearing the fiber. The juice that comes out is richer, more complex, more layered. Fermented with the fibers in the tank, it makes a tequila that tastes like the agave actually existed.

It's slow, it's labor-intensive, and it costs more. But it's the reason the best bottles taste like the best bottles.
