It refers to extracting agave juice with a large stone wheel (a tahona) instead of a mechanical shredder — a slower, more traditional method some distillers believe preserves more flavor from the agave fiber.
Blanco is unaged and bottled shortly after distillation, showing the agave's raw character; Reposado rests in oak barrels for a few months, picking up a light golden color and rounder flavor.
It means no coloring, glycerin, or flavoring agents were added after distillation — common practice at many large brands but avoided here to keep the spirit closer to pure agave and oak.
