The Fableist 556 Rosé - 750ml

The Fableist 556 Rosé is a vibrant, estate-grown expression from The Fableist Wine Company, a Paso Robles producer known for pairing serious winemaking with playful storytelling — each release named and numbered like a chapter in an ongoing fable. This wine is produced entirely from estate fruit, blending 86% Grenache grown at the Adelaida Preserve with 14% Blaufränkisch sourced from the Templeton Preserve, a vineyard originally planted for famed winemaker Ken Volk. The grapes are pressed whole cluster and fermented with native yeasts in stainless steel tanks, with no sagnée method involved, preserving a bright, youthful character.

On the nose, the wine opens with notes of peach rings, preserved lime, underripe strawberry, and plantain. The palate brings a lively mix of cranberry essence, ripe mandarin, and a touch of pink Himalayan salt, finishing with the same crackling energy as a wave breaking along the Central Coast shoreline. It was blended and bottled in January 2024 to lock in its freshness — a rose built for immediate enjoyment rather than the cellar.

Pour it alongside a simple salad of diced cucumber, feta, and cherry tomatoes finished with olive oil and balsamic, or match its bright acidity with prosciutto and ripe crenshaw melon.
