The Espadín Clay Pot Mezcal was our inaugural offering, born from a deep reverence for traditional craft and a relentless curiosity about what makes each village’s mezcal unique. After learning from Maestros Mezcaleros across Mexico, we refined a production approach that honors time-honored methods while remaining faithful to the landscape that shapes every batch. In our exploration, we observed that distillates from Sola de Vega carried a distinctly sweeter and spicier profile than those from other regions, prompting us to establish a dedicated operation there and embrace the concept “from seed to bottle.” This means we oversee every step—from the cultivation of Espadín agave and the meticulous care of the fields to the careful roasting, milling, fermentation, and, finally, distillation in traditional clay pots. The clay pot technique, with its porosity and slow heat exchange, imparts a gentle complexity that supports the spirit’s true character rather than obscuring it. Our Espadín Mezcal reveals a pronounced minerality, conjuring soil and mineral-rich terrain, while delicate notes of avocado leaf, fresh herbs, subtle florals, and a bright citrus lift give it balance and vibrancy. Each bottle embodies the land’s fingerprint and the hands that tended the agave, inviting you to explore layered aromatics and a clean, lingering finish that speaks to patient craftsmanship and a deep commitment to the seed-to-bottle journey.
