LALO Tequila is crafted from 100% Weber blue agave sourced from the Highlands of Jalisco, selected for their robust sugars and characteristic profile. The agave hearts are harvested at optimal maturity, then slow-cooked in traditional stone ovens to convert starches into fermentable sugars, a step that helps build the tequila’s clean, expressive backbone. After cooking, the agave is pressed to extract the sweet, vegetal juice, which is then carefully fermented using a proprietary Champagne yeast that contributes a refined, nuanced yeast-driven character while maintaining the purity of the agave flavors. The mash is then double-distilled to achieve a smooth, bright profile with a crisp finish that highlights the agave’s natural sweetness.
LALO is named in honor of one of its co-founders, Maestro Tequilero Eduardo “Lalo” González, who is the grandson of Don Julio González, the founder of the renowned Don Julio tequila brand. This lineage reflects a deep commitment to tradition fused with contemporary production practices. The tequila is presented as a blanco, with no additives or colorants and no aging in barrels, underscoring its commitment to showcasing the true, unaltered character of the agave and the careful, hands-on crafting process. There are no plans to release aged versions, as the focus remains on delivering a pristine, agave-forward tequila that can be enjoyed neat, on the rocks, or in a range of cocktails, where its bright, vibrant profile can shine.
