Wine Fellas Thunder Daze Brut Zéro is produced by Wine Fellas in Mendocino County, California, from a base of 2019 CCOF Certified Organic Sauvignon Blanc sourced from the Upton Vineyards — a twenty-five-acre site planted in the 1960s on loam soils and farmed by John and Jan Upton. Wine Fellas is the project of Mendocino-rooted producers whose portfolio draws exclusively from certified organic, biodynamic, and sustainably farmed sites across the county. The Thunder Daze occupies a deliberate technical middle ground: not quite a Pétillant Naturel and not technically a Méthode Traditionnelle, but a hybrid of both approaches that draws the precision of the Champagne method into the low-intervention, organically farmed world Wine Fellas operates within. The result is a sparkling wine that is sophisticated without being conventional, fizzy without being frivolous, and dry to the bone — the Brut Zéro designation indicating zero dosage, no residual sugar added after disgorgement.
The base wine is settled for twenty-four hours in stainless steel before fermentation and élevage in neutral French oak. Secondary fermentation in the bottle builds the mousse from the wine's own natural sugars, producing the fine, persistent effervescence characteristic of bottle-fermented sparkling wine without the interventionist additions that conventional production typically requires. The wine is produced sans soufre — without sulfur dioxide additions — and is bottled unfined and unfiltered, preserving the full natural character of the Upton Vineyards Sauvignon Blanc and the Mendocino County terroir from which it was drawn.
The nose opens with a frothy, lively mousse and aromas of sourdough brioche, key lime, and orchard apple alongside a mineral freshness that the loam-grown Sauvignon Blanc and the zero-sulfur production preserve without distortion. The palate is bright and precise, with cidery pear, lemon meringue, and a seductively wild orchard fruit quality that the neutral oak élevage develops without imparting wood flavor. The finish is mineral and lingering, driven by the wine's natural acidity and the clean, chalky persistence of a bone-dry sparkling wine made to express its source rather than its dosage.
