Kaiyo “The Unicorn” 10 Year Whiskey is an ocean-matured Japanese whisky aged in Mizunara oak, a rare wood prized for its aromatic complexity and subtle spice. The spirit is matured for ten years before undergoing Kaiyo’s signature maritime aging process, during which barrels travel by sea, exposing the whisky to changing temperatures, humidity, and gentle motion.
Mizunara oak contributes sandalwood, incense, and delicate spice, while the ocean maturation environment encourages gradual oxidation and integration. The movement of the barrels and exposure to sea air are intended to soften the spirit’s structure while preserving clarity and balance. Barrel selection focuses on harmony between wood influence and grain character.
On the palate, vanilla, coconut, and soft oak spice unfold alongside subtle tropical fruit and incense-like notes. The texture is smooth and composed, leading to a long, warm finish with gentle sweetness and maritime nuance. Kaiyo “The Unicorn” reflects both tradition and experimentation, offering a whisky shaped by rare oak, extended maturation, and the influence of the sea.
