The GlenAllachie 11 Year Palo Cortado is part of Billy Walker's acclaimed Wood Finish series — single malt Scotch whiskies given a secondary maturation in rare and distinctive casks to unlock new layers of character. Palo Cortado is one of the rarest styles of sherry, combining the crisp, nutty character of an Amontillado with the rich, complex depth of an Oloroso. Finishing GlenAllachie in Palo Cortado casks produces a whisky of exceptional elegance and complexity.

The result is a fascinatingly layered dram. On the nose, dried apricot, walnut, warm spice, and milk chocolate mingle with the distillery's characteristic coastal and earthy notes. The palate is medium-bodied with a beautiful interplay of hazelnut, raisin, toffee, subtle oak, and a faint whisper of citrus peel — all framed by the refined sherry influence that Palo Cortado uniquely provides. The finish is long, dry, and quietly complex.
