Elevación 1250 Blanco Tequila - 750ml

This is an additive-free tequila produced at Hacienda de Oro (NOM 1522) from 100% blue Weber agave grown in Amatitlán in the Tequila valley (Los Valles), Jalisco. Under the careful direction of Iliana Partida, each stage of production is designed to honor traditional craft while embracing modern quality controls. The agave plants are cultivated to maturity in the rich volcanic soils of the region, then harvested by hand at peak sweetness and full maturity. The harvested piñas are cooked in autoclaves, a process that softens the fibers to unlock sugars efficiently while preserving delicate aromas. After cooking, the piñas are thoroughly milled with a roller mill to extract the sugary juice. The resulting wort is fermented in stainless steel tanks using natural yeasts, with fermentation allowed to proceed slowly to develop depth and character, and without the inclusion of fibers that could cloud or alter the profile. The fermentation is carefully monitored to balance aroma, body, and finish. Distillation takes place twice on stainless steel pot stills, a traditional approach that refines the distillate and concentrates purity. Each cut—head, heart, and tail—is made with precision to yield a smooth, clean spirit that maintains the distinctive agave-forward profile. The final product is bottled to showcase its clarity and balance, offering a genuine expression of highland agave and meticulous technique.
