El Elefante Pisador Gewurztraminer 2023 is produced by Pablo Fallabrino at Viñedo de los Vientos in Atlántida, within the Canelones region of Uruguay — a coastal zone situated where the Río de la Plata estuary meets the Atlantic Ocean. The vineyard, sourced from a two-hectare plot planted between 1995 and 2012, sits in calcareous clay soils that temper the natural exuberance of the Gewurztraminer variety, while the proximity to open water moderates temperatures and introduces a persistent maritime influence. The combination of Atlantic breezes, high ambient humidity, and warm, sun-exposed growing conditions creates a climate unusually well-suited to an aromatic variety more commonly associated with Alsace or Alto Adige.

The wine is produced without additives of any kind, including sulfur, in keeping with Fallabrino's minimal-intervention approach. After hand harvesting, the destemmed fruit is fermented in stainless steel with one week of skin contact, a maceration that extracts phenolic compounds, color, and aromatic depth from the Gewurztraminer's distinctive pink-hued skins. The must is then racked and aged for four weeks in stainless steel before being bottled unfined and unfiltered, preserving the natural cloudiness and full aromatic spectrum of the grape and the production process.

The palate is intensely aromatic and textured — rose petal, dried apricot, lychee, and ginger spice arrive on the nose and carry through to the mid-palate, where the week of skin contact adds a fine tannic grip and a savory, tea-like quality that anchors the wine's otherwise exuberant aromatics. The acidity is lively and precise, a product of the maritime growing environment, providing structural lift through a finish that is dry, spiced, and lingering. The overall character is expressive and place-specific, shaped by a terroir with no close European equivalent.
