Alma del Jaguar Barricas is a series that showcases the distinct profiles created by different cask finishes, and the Mizunara expression may be its most unusual. This single-estate Los Altos Añejo spent 22 months aging exclusively in Mizunara oak from Japan, one of the rarest oaks in the world. Mizunara, which means "water oak," grows slim, twisted branches and is more porous than other oak species, making it notoriously difficult to cooper.
The Japanese oak marries beautifully with cooked agave. Expect sandalwood, coconut, honey, tea and a hint of Japanese incense, with the soft, spiced sweetness Mizunara is known for. At 44% ABV (88 proof) it has the weight to sip neat, slowly.
Made from 100% puro de agave in Los Altos de Jalisco: cooked in stone and brick ovens, extracted with a roller mill, open-air fermented with wild and cultivated yeast, and double distilled in copper pot stills using deep well water.
Tasting notes: sandalwood, coconut, honey, tea, Japanese incense
