The Stag Cabernet Sauvignon is sourced from Paso Robles vineyards where warm daytime temperatures and cooling evening influences allow Cabernet Sauvignon to achieve full phenolic ripeness while retaining structure. The region’s diverse soils and pronounced diurnal shift contribute to concentration balanced by natural acidity.
Fermentation is conducted with careful attention to extraction, building firm but refined tannins that support aging and texture. Oak maturation is integrated deliberately, adding structure and subtle spice without obscuring varietal character. The winemaking approach emphasizes balance, depth, and site transparency.
