Suntory -196 Strawberry is produced using Suntory’s Freeze Crush Infusion process, in which whole strawberries are flash-frozen at -196°C using liquid nitrogen before being finely crushed. This technique captures the fruit’s delicate aromatics, natural sweetness, and acidity at peak freshness, avoiding the cooked or artificial character common to conventional fruit extraction.
The strawberry essence is infused into a clean shochu-based spirit selected for neutrality and structural balance. Carbonation is applied with restraint, allowing the fruit’s softness and aromatic lift to remain intact. Sweetness is measured and controlled to support the fruit rather than dominate it, maintaining clarity and composure.
