Suntory -196 Lemon is produced using Suntory’s proprietary Freeze Crush Infusion process, in which whole lemons are flash-frozen at -196°C using liquid nitrogen before being pulverized. This method captures the fruit’s aromatic oils, acidity, and bitterness in precise proportion, preserving freshness that would otherwise be lost through conventional extraction.
The lemon essence is then infused into a clean shochu-based spirit, selected for neutrality and structure rather than sweetness. Carbonation is applied with restraint, allowing texture and acidity to remain balanced. Sugar levels are carefully calibrated to support the citrus profile without masking its natural sharpness.
On the palate, fresh lemon peel and juice arrive immediately, followed by subtle bitterness and a dry, crisp mid-palate. The texture is light but structured, with a finish that remains clean and refreshing rather than sweet.
