. Made from wild Criollo agaves, a smaller and richer pina than the common blue weber, which grow naturally on the steepest slopes. The dangerous task of harvesting these is rewarded with more flavor. After a 3 day cook in the small stone ovens of Casa Siete Leguas, the agaves are crushed with tahona.
