Redbreast 15 Year is a single pot still Irish whiskey produced at the Midleton Distillery in County Cork, Ireland, where the distillery draws from a long tradition of pot still production rooted in the use of both malted and unmalted barley. The unmalted barley component — a defining characteristic of the Irish pot still style — contributes a distinctive creaminess and spice that sets the category apart from Scotch malt whisky. County Cork's temperate maritime climate, moderated by the Atlantic to the south and west, creates stable aging conditions that allow the spirit to develop slowly and evenly over its fifteen years in wood.
The whiskey is matured in a combination of American oak bourbon casks and Oloroso sherry butts, a pairing that has defined the Redbreast house style for decades.
