The family has nurtured mezcal on the same property since 1910, a lineage now in its fourth generation of mezcaleros. Today, Isidro Pérez Escot is guiding the craft, training his son Amador in the family’s methods and philosophies. The operation blends time-honored techniques with a careful sensitivity to the agave’s character, resulting in a mezcal that feels both rooted in tradition and distinctly modern in its balance.
