Sipsy

One day, just for fun, we put some rye whiskey into barrels originally used to age wine. When we mixed the vermouth-ed and the syrah-ed, we discovered an all-natural, not disgustingly sweet whiskey for the rest of us.
Yippee Ki-Yay shines best at room temperature, neat. With a little time in the glass—just a few minutes—the bouquet opens up to its full potential, revealing warmth, spice, and a hint of fruit that lingers on the palate.
Straight Rye whiskeys featured:
- 95% rye, 5% barley malt from MGP
- 53% rye, 37% corn, 10% barley from Barton
- 80% rye, 20% malted rye from High West Distillery
ABV: 46% (92 proof). This is a robust profile that holds its own in a glass, offering complexity without overpowering sweetness. The structure of the rye-forward grain bill provides pleasant pepper and citrus notes, while the underlying malt adds depth and a touch of nuttiness. The aging character from the wine-barrel interaction softens the bite, producing a balanced finish that invites a slow, contemplative sip. It’s a versatile spirit that pairs well with a simple ice cube or a splash of mineral water to release different facets of aroma and taste. Overall, Yippee Ki-Yay presents as a thoughtfully crafted, approachable rye whiskey that can win over casual tasters and connoisseurs alike.
