G4 Special XM Edition high proof is twice distilled in copper stills with complex aromas, a long finish, and perfect texture. XM meaning Extra Mature: so far as we know, this was the last field of 8 year-old agave in all of Jesus María. Extremely high sugar content.
XM also meaning Extra Madera: as 30% of this Lot was fermented in the wooden tinas. Normally there is no wood fermentation used for the high proof. This high proof expression is chock full of minerality and herbaceousness and is best if left to rest for a few minutes before sipping. Made exclusively from a 50/50 mixture of collected rainwater and spring water. Produced by fourth-generation Master Distiller Felipe Camarena.
