This is an additive-free tequila produced at Hacienda de Oro (NOM 1522) from 100% blue Weber agave grown in Amatitlán, in the Tequila Valley (Los Valles), Jalisco. Under the direction of Iliana Partida, the agave is cooked in autoclaves, then extracted via roller mill. The mash is fermented without fiber in stainless steel tanks using natural yeasts, contributing to a clean, expressive profile. The spirit is twice distilled on stainless steel pot stills to achieve the desired balance of aroma and structure. This expression is rested for four months in American oak, allowing subtle integration of flavors and a gentle roundness that enhances its agave-forward character without masking it. The result is a tequila with refined sweetness, bright citrus and floral notes, and a smooth, lingering finish. It reflects a careful, hands-on approach to production, from field to bottle, prioritizing purity and balance. The use of autoclave cooking, roller-mill extraction, and natural fermentation, combined with careful copper-free distillation and careful barrel aging, showcases a modern yet respectful interpretation of the agave journey. This tequila is suitable for sipping neat or enjoying in cocktails where the agave core can shine through. While preserving the crispness and vitality of the agave, the four-month oak rest adds depth, polish, and a touch of vanilla and spice that evolve with each sip.
