Sipsy

With the perfect aromatic notes of oaken vanilla, caramel and maple sugar, this blend entices the senses from the first whiff. A buttery caramel core combines with subtle spice and a resonant wood-aged character, inviting a rich, layered experience on the palate. The aroma hints at toasted wood, hints of tropical fruit, and a gentle sweetness that sits nicely beside the more robust elements of the rum. On tasting, the mouthfeel is smooth and rounded, delivering a creamy, almost velvety texture that coats the tongue without heaviness.
The core of the profile comes from a thoughtful balance of components: the youngest rum in the blend is eight years old, aged in American oak ex-bourbon casks sourced from Kentucky, bringing a crisp, structural backbone and a disciplined vanilla and toasty oak backbone. Complementing that, additional maturations contribute deeper notes of burnt sugar, toffee, and a faint higher-toned spice that lingers with grace. There is an oily macadamia nuance that adds a decadent, nutty dimension, while a peppery edge threads through the finish, providing a quiet, crisp bite that keeps the palate engaged.
Don Pancho, honoring a personal memory, sought to recreate the character of the rum he drank in his youth in Cuba, a time when seven- and eight-year-old rums were among the oldest widely available. The result is a balanced, expressive spirit that honors that era while offering contemporary polish—a thoughtful homage to tradition and a testament to careful blending, patience, and craftsmanship. The finish is long and harmoniously dry, inviting another thoughtful sip that reveals new echoes of vanilla, wood, caramel, and a subtle spice that lingers invitingly.
