DAOU Paso Robles Cabernet Sauvignon is shaped by the elevated limestone-rich soils of the Adelaida District, where altitude and diurnal temperature shifts promote extended ripening and balanced phenolic development. Vineyards are farmed with attention to yield control and fruit concentration, allowing Cabernet Sauvignon to mature with both power and precision.
Fermentation is conducted with temperature control to preserve varietal purity while encouraging depth and structure. Aging takes place in oak barrels selected to complement rather than dominate, contributing subtle spice, frame, and polish. The winemaking approach prioritizes integration, allowing fruit, tannin, and acidity to align naturally over time.
On the palate, dark fruit—blackcurrant and plum—leads, followed by cocoa, graphite, and gentle oak spice. The texture is full yet composed, with tannins that are firm but refined.
