Bozal Cuishe is a highland mezcal produced from semi-wild Cuishe agave, cultivated in arid, elevated soils that concentrate sugars and minerals. The agave is allowed to reach full physiological maturity, ensuring that the raw material expresses both site and varietal character. Harvest timing is carefully observed to maximize balance and structural integrity.
Traditional pit-roasting methods are used to cook the agave slowly over mesquite coals, imparting smoke that is precise rather than aggressive. Distillation is conducted in small copper stills, preserving the agricultural nuances and mineral tension of the raw agave. Aging is minimal or absent, allowing the inherent character of the plant to dominate.
On the palate, herbal notes, gentle smoke, and a subtle mineral edge unfold with clarity. The texture is supple yet focused, and the finish lingers with a dry, measured warmth.
