La Luna Bruto is crafted by Adan Perez and Edgar “Jigy” Perez. This mezcal is bright with notes of nori, roasted green pepper, and cantaloupe, offering a distinctive and refreshing profile. The agave used for this expression matures an impressive 25 years, developing deep character and complexity before harvest. La Luna Bruto is produced with maguey Bruto, which belongs to the Agave inaequidens family, contributing a robust, mineral-forward backbone to the spirit.

The agave plants selected for this mezcal were harvested in the hills just beyond Etucuaro, Michoacán. These wild brutes are physically large, standing tall and proud in their rugged habitat. However, they tend to carry low sugar content and yield relatively modest production, making their expression especially prized for its concentrated flavor and artisanal lineage. The cooking process for these agave runs for 168 hours, allowing the flesh to become tender and to develop complex, smoky aromatics.

Following cooking, the hearts rested for 288 hours, a lengthy pause that helps smooth harsh edges and fuse the flavors. Fermentation extended for 192 hours, enabling the integration of nuanced fermentative esters. Given the inherently low sugar levels, the fermenting mash was inoculated with Pulque derived from the same agave, a traditional technique that can enhance mouthfeel and depth without diluting the agave-driven character. The result is La Luna Bruto: a meticulously crafted mezcal that echoes its wild origin while delivering a polished, memorable tasting experience.
