We use only three ingredients to craft Copalli Barrel Rested Rum: fresh-pressed juice from locally grown, organic sugar cane, plus yeast and rainwater. Our Copal Tree Distillery is designed to be zero waste, and we proudly craft a rum free of added flavors, colors, or additives. The sugar cane juice is carefully fermented and distilled, first in our traditional pot still and then refined in our modern column still to extract the pure, natural character of the cane. After distillation, the spirit rests in used American oak bourbon barrels, which once held familiar bourbon, allowing the rum to acquire nuanced caramel, vanilla, and spice notes from the interaction with the seasoned wood. This resting phase occurs in the unique rainforest climate, where humidity and temperature swings gently encourage slow maturation, yielding depth without overpowering the sugar cane’s inherent sweetness. The result is a rich, smooth spirit with a balanced profile that delights neat, on the rocks, or as the backbone of vibrant, tropical-inspired cocktails.
