Hakkaisan Junmai Daiginjo Dodgers Limited Edition is produced at the Hakkaisan Brewery, founded in 1922 at the foot of sacred Mount Hakkai in the Minami-Uonuma region of Niigata Prefecture — a mountainous area of deep winter snowfall that has shaped the brewery's production from its founding. The snowpack that accumulates each winter on Hakkai's eight peaks — a mountain whose name translates literally as "eight seas" — filters slowly through mountain soil before emerging as a soft, pure spring at the base of the mountain. This water, low in minerals and exceptionally clean, is used at every stage of Hakkaisan's production and is considered the foundational element of the brewery's characteristically crisp and elegant house style. The Dodgers edition marks a formal partnership between Hakkaisan and the Los Angeles Dodgers, for whom the brewery serves as the official sake of the club, with the liquid presented in Dodger Blue-labeled packaging carrying the team's championship logo.
The Junmai Daiginjo classification represents the highest tier of purely rice-based sake — brewed without added brewer's alcohol and using rice polished to 45% of its original grain size, removing 55% of each kernel. The rice used is a blend of three respected sake rice varieties — Yamadanishiki, Miyamanishiki, and Gohyakumangoku — each chosen for the distinct aromatic and structural contributions it brings to the final assemblage. All koji is produced by hand, a labor-intensive practice that Hakkaisan maintains across its premium range to ensure precise enzymatic development and the delicate flavor integration that distinguishes the brewery's Daiginjo expressions from mechanically produced equivalents.
The nose is restrained and refined — delicately floral with gentle notes of melon, pear, and a whisper of steamed rice that is characteristic of the Niigata Daiginjo style. The palate is smooth, clean, and lightly rounded, with an elegant natural sweetness that the hand-crafted koji and the purity of the mountain water make possible. A soft acidity provides balance through the mid-palate, and the finish is fresh and graceful, fading cleanly without weight or residue. Serve well chilled alongside sashimi, oysters, grilled fish, or simply on its own as a celebration of the craft behind it.
